En este contexto, un estudio recientemente publicado en una revista cient\u00edfica indexada demostr\u00f3 que el bagazo del caf\u00e9 (el principal subproducto de su elaboraci\u00f3n) puede utilizarse para mejorar la calidad nutricional de alimentos de consumo com\u00fan, sin afectar su aceptaci\u00f3n entre los consumidores.<br><br>El doctor Emiliano Ter\u00e1n Bobadilla, investigador de la Facultad de Ciencias F\u00edsico Matem\u00e1ticas (FCFM) de la Universidad Aut\u00f3noma de Sinaloa (UAS), se\u00f1al\u00f3 que en la entidad se ha consolidado una industria del caf\u00e9 de especialidad que, adem\u00e1s de representar una oportunidad econ\u00f3mica, ha despertado un creciente inter\u00e9s acad\u00e9mico. Coment\u00f3 que desde hace tres a\u00f1os coordina una l\u00ednea de investigaci\u00f3n en ciencia del caf\u00e9, la cual ha generado diversas publicaciones en revistas cient\u00edficas de prestigio.<br><br>Sobre el estudio recientemente publicado, explic\u00f3 que el equipo de investigaci\u00f3n analiz\u00f3 el uso del bagazo del caf\u00e9 como sustituto del chocolate en productos alimenticios, con el objetivo de ofrecer una alternativa m\u00e1s accesible y saludable. Detall\u00f3 que el chocolate, adem\u00e1s de su costo elevado, puede contener metales pesados que, en algunos casos, superan los niveles recomendados para el consumo humano.<br><br>El tambi\u00e9n miembro del Sistema Nacional de Investigadoras e Investigadores (SNII) dio a conocer que se realizaron comparaciones entre bollos elaborados con chocolate y aquellos elaborados con bagazo de caf\u00e9. Mediante an\u00e1lisis f\u00edsico-qu\u00edmicos y pruebas sensoriales con m\u00e1s de 100 participantes, los resultados indicaron que los productos con bagazo presentaron un mayor valor nutricional \u2014especialmente en fibra y antioxidantes\u2014 sin mostrar diferencias significativas en la percepci\u00f3n sensorial de los consumidores.<br><br>Destac\u00f3 que estos hallazgos confirman la viabilidad de sustituir el chocolate por bagazo de caf\u00e9, mejorando la calidad nutricional sin afectar la aceptaci\u00f3n del producto. Adem\u00e1s, subray\u00f3 que el aprovechamiento de este subproducto permite reducir desperdicios y avanzar hacia un esquema de econom\u00eda circular con un impacto positivo en el medio ambiente.<br><br>\u201cEsta l\u00ednea de trabajo abre la posibilidad de desarrollar alimentos con alto valor nutrimental dirigidos a comunidades estudiantiles, donde existe una oferta limitada de opciones saludables.
