El proyecto busca ofrecer una alternativa econ\u00f3mica, saludable y de gran aceptaci\u00f3n para combatir enfermedades cr\u00f3nicas de alta prevalencia, como la obesidad y la diabetes mellitus tipo 2.<br><br>\u201cEl desarrollo de este tipo de pastas es muy interesante porque nos permite contar con opciones distintas a las comerciales. Al utilizar granos no tradicionales como el ma\u00edz azul y el amaranto, en comparaci\u00f3n con las pastas de trigo convencionales, podemos obtener los beneficios espec\u00edficos que aporta cada uno de ellos\u201d, destac\u00f3 la cient\u00edfica.<br><br>La docente e investigadora universitaria apunt\u00f3 que, hoy en d\u00eda, el mercado de los alimentos funcionales crece debido a su capacidad de aportar beneficios a la salud m\u00e1s all\u00e1 de la nutrici\u00f3n b\u00e1sica. Destac\u00f3, por ejemplo, que el consumo de ma\u00edz azul provee compuestos antioxidantes, mientras que el amaranto ofrece una alta calidad proteica y un excelente perfil de amino\u00e1cidos esenciales.<br><br>\u201cEn este proyecto ya optimizamos las concentraciones de los diferentes granos integrales para que el producto tenga un alto potencial antioxidante y cumpla con las propiedades de una pasta tradicional. Ya contamos con la pasta evaluada y se ha comprobado que posee todo este potencial\u201d, afirm\u00f3.<br><br>Asimismo, refiri\u00f3 que este tipo de proyectos de investigaci\u00f3n, adem\u00e1s de tener un impacto directo en la salud p\u00fablica, fomenta la revaloraci\u00f3n agr\u00edcola regional.
