En este posgrado se trabaja en la elaboraci\u00f3n de una galleta funcional a base de harina de c\u00e1scara de mango, garbanzo y almid\u00f3n de arroz.<br><br>La investigadora Mar\u00eda Guadalupe Beltr\u00e1n G\u00f3mez explic\u00f3 que el proyecto surge a partir de estudios previos que demostraron el potencial de la c\u00e1scara de mango para mejorar las propiedades de productos horneados; por ello, se busc\u00f3 combinar este ingrediente con otros de origen vegetal para potenciar sus beneficios nutricionales.<br><br>Entre las caracter\u00edsticas que distinguen a este producto, la acad\u00e9mica se\u00f1al\u00f3:<br><br>\u201cNuestra formulaci\u00f3n es a partir de ingredientes libres de gluten, ya que en el mercado existe un gran inter\u00e9s por esa tendencia; asimismo, tiene un alto potencial debido a su alto contenido de fibra gracias a la c\u00e1scara de mango\u201d, destac\u00f3.<br><br>Coment\u00f3 que, durante el desarrollo de la investigaci\u00f3n, uno de los principales desaf\u00edos fue sustituir la funci\u00f3n estructural que normalmente aporta el gluten en la panificaci\u00f3n.
